The Unforgettable Awards, previously known as the Unforgettable Gala, returned for its 23rd event on March 7. Although the event usually takes place at the Beverly Hilton in December to wrap up the year, this year’s event took place at the Fairmont Century Plaza in Hollywood, just a few weeks after Lunar New Year. One of the honorees of the year was Chef Jet Tila, who was honored for Culinary Excellence in Media. Ahead of his award acceptance, Asia Blooming spoke with the restaurateur.

When thinking back on his career, the choice to become a chef was quite easily explained. “Food is probably the happiest way to introduce culture,” he began. “It’s not political, and my job is to tell stories with my food. Though my story is Thai and Chinese, I try to also tell stories of Vietnam, South Korea, and Japan, and use Food Network as a platform to share all Asian cultures.” If he were to summarize his personal story through one dish, his choice would be a unique fusion between his two cultures. “Drunken Noodles represent my personal story because it’s a blend of Thai and Chinese cultures. We took noodles from China and basil from Thailand, and it’s also quite a popular dish.”

As a nod to this year’s theme of passion, he effortlessly selected a flavor that represented the occasion. “If passion had a flavor, I think it’d be chili or spice. The East makes spice the best, and we use it the best, and we’re spicy, and people will recognize it as we make ourselves known.”

Thinking reflectively on 2025 and looking forward to 2026 simultaneously, his greatest goal is to continue maintaining his work-life balance. “I’m at a phase in my life where, unlike most restaurateurs and chefs, I can actually spend time with my family, so I’m really enjoying balancing all of our enterprises with being a dad and being a husband. I know that the Year of the Horse is supposed to be a strong year, so I’m going to take strong work in, but find some good balance to continue spending time with my family.”
